As Aussies, we obviously have taken something British and tried to improve upon it - we have plenty of great shiraz grapes and we make some of the best gin in the world, so it seemed a pretty bloody good idea to combine the two and see if the end result could be greater than the sum of the parts!"

While there are some fantastic fruit gins out there, it’s not all about the berries. Four pillars currently produce 3 different diveres and exciting gins made in Australkia’s famous Yarra valley, known for its superb wines, but also now for great Australian gins. Barossa Shiraz Gin is produced just once a year from the same super-intense Shiraz grapes that are revered across the globe. In 2015 They made their home in Healesville, Yarra Valley in what was once a timber yard. Four Pillars Distillery brings together everything under one roof. They make and experiment with gin on one side, while we serve up drinks and tastings on the other. The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. Come mid-2020 he was wondering about the gin in these barrels and a simple thought came to mind – “What if we bought a tonne of shiraz from Yarra Yering, off Underhill ideally and made a super intense Bloody Shiraz gin, somehow also utilising the gins in the YY barrels . . .” Absolutely not! Many gins do have added sugar to make them sweeter and this is particularly the case with gin liqueurs. However, an equal number of gins proudly claim to contain no added sugar and only use natural flavourings.We also landed at 41.8% alcohol by volume, which is around 10% stronger than the regular Bloody Shiraz Gin which sits at 37.8% ABV. The additional alcohol engenders more warmth and extra ‘oomph’ to the palate. Aromatically is has fresh pine needles, citrus and spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet with a long juniper and spice character on the finish.
