Each sip becomes a celebration of Belgian brewing brilliance. Brugse Zot comes in two forms, with the Blond as its flagship, and a Dubbel rounding things out. Quintessentially Belgian, the beer has a big body, with fruity banana notes from the yeast blended with complimentary hops. Secondary fermentation in the bottle leads to a long maturation process and a soft carbonation. It’s a beer that gets better and better.

Brugse Zot also goes through a re-fermentation that helps develop the taste while it’s in the bottle. Across the square, outside the brewery, horses and carriages clip clop down the lane. De Halve Maan is in the final weeks of testing the beer pipeline: four separate polyethylene tubes that look like ordinary drainpipes.Once the brewery was restarted, Xavier bought Brugse Zot onto the market and it soon gained a name for itself due to its special recipe. Brugse Zot is now the only beer being produced in Bruges town centre. Underneath Bruges’ sleepy exterior and step-gabled houses lies a piece of technical ingenuity unique to the world. Since it refuses to leave its authentic place in the historic city core, a 500-year-old brewery pumps 1,000 gallons of beer underneath its cobbled lanes and winding canals to their bottling factory via an actual beer pipeline.

Nicole Stael, who sells postcards, snow globes and souvenir plates, said that in the 40 years she had owned her gift shop business had not been so bad.
