Well simply because this recipe is a staple if you're a true die hard foodie like moi. I cannot believe it has taken me so long to finally add this recipe to the blog. I chose to include coconut sugar to balance things out, don't worry it won't have any impact on the final product. My strategy is to pressure cook the oxtail for 30 minutes to reduce the number of hours it takes to cook. Oxtail takes a long time to cook and gets tender. It takes more than 2 hours of cooking before the oxtail softens. Upgrade your meal from bland to flavourful with this delicious medley of spices! You can always use store bought seasonings but if you want to be able to adjust to taste and diet, you have to make your own all purpose seasoning. This boosts the taste of any meal so you can use it whenever.

Island Herbs & Spices. 2022. MAGGI JAMAICAN ALL-PURPOSE SEASONING, SEASONING FOR RESTAURANT –. [online] Available at: [Accessed 17 September 2022]. Moh.gov.jm. 2022. Ministry of Health & Wellness, Jamaica. [online] Available at: [Accessed 16 September 2022]. This all-purpose seasoning blend only uses seven ingredients! Feel free to start here and add or sub as you wish. This recipe includes: Fried plantain, and cheese and macaroni are also popular accompaniments to many Caribbean meals not just a Sunday lunch.Dried Oregano, Parsley Flakes and Thyme– these dried herbs work well together in this blend, and adds an aromatic, fresh, earthy flavour. Thyme and oregano should be added, parsley can be omitted.

Firstly, the oxtail is sear on all sides before it’s put to cook. There are two methods Jamaicans use to enhance the brown colour of the oxtail, melted brown sugar in the pot before adding the oxtail or coating the oxtail with browning sauce before cooking. In the recipe below, I used both methods. Like so many people I'm not a huge fan of purchasing pre-blended seasoning, reason being because the vast majority tend to include E numbers, or some type of additives and/preservatives. These had to be soaked overnight and cooked slowly until they were tender and edible before the rice and other ingredients were added to the pot. This all-purpose seasoning blend is the perfect mix of spices that all home cooks should have on hand. Made with everyday spices, this will elevate any meat, seafood, or vegetable recipe. THANK YOU for all of your support, for visiting my blog, commenting, and sharing my recipes with your friends and family. I am SO thankful for you!Rub the seasoning mix generously on the protein of your choice, making sure it’s well coated. For the best results, let it marinate for at least 30 minutes (or longer, if possible) before cooking. Grill, bake, pan-fry, or roast the protein until it’s fully cooked and has absorbed the delicious Jamaican jerk flavors. Which means you can have some real fun making it, whether as the main accompaniment to a range of meat dishes traditionally served in the Caribbean, or as a side dish to complete many a meal. Low in carbs: The spices used in all purpose seasoning are typically carbohydrate-free in addition to being fat-free.

The answer I think is lost in the mists of time, and now that’s just the way it is! We Caribbeans eat all kinds of different peas/beans, but the most popular is kidney beans, or red peas as they’re known in the Caribbean. There are many different types of products that get labeled as all purpose seasoning and very few of them have any substantial nutritional value. In fact, the only widely available exception is Bragg’s Liquid Aminos, which provides a small amount of protein per serving. The more conventional all purpose seasoning blends offer only very small amounts of nutrients aside from salt. However, that does not mean that they are completely without health benefits. Characteristics that can make all purpose seasoning beneficial include: Jamaican style oxtail stew cooked with butterbean and flavoured with browning sauce, pimento (allspice), ginger, thyme and scotch bonnet pepper. You can also hear from Lynda's mother Catherine about celebrating the 75th Anniversary of Windrush and her Caribbean food memories. As well as read Lynda's recipes for a traditional Jamaican Celebration lunch. Jamaican flavour: Scallion, thyme, and scotch bonnet pepper add that “Jamaican” flavour. It does matter if you use fresh or dry thyme, as you will still get the Jamaican taste. In many Caribbean homes, rice and peas is a classic side dish forming part of the main meal on a Sunday.
